The students, ranging from freshmen to seniors, were asked whether or not they had knowledge or interest in vegan and if they had ever tried vegan food. Of these, 136 students responded to the survey(response rate of 42.4%).  Of the students who were responded to the survey, 100% of them had heard the term vegetarian, and 79.4% had heard the term vegan. But only 2.9% had accurate knowledge of what a vegan was, and only 8.1% had ever tried vegan food.  In addition, only 31.6% of the students said they were interested in a vegan diet, and 51.5% said they were “not confident in providing nutritional guidance to vegans after college” and 46.3% answered “not sure.”  The Training Institutions for registered dietitians are required to address the education corresponding to food diversity.}, pages = {29--36}, title = {管理栄養士養成施設学生のヴィーガンに関する認知}, year = {2022}, yomi = {オオサカ, ユウコ} }
